Located on the second floor of the new Hilton Norfolk The Main, Varia was designed with a luxe interior complete with an open kitchen, reclaimed chandeliers from the historic Cavalier Hotel in nearby Virginia Beach, and two hidden "speakeasy" inspired private dining rooms.
Anchoring the signature lounge atmosphere at Varia is a 24 bottle wine cruvinet and live piano entertainment provided nightly to complement a full schedule of culinary workshops and tasting events.

CHEF Patrick Latham
Varia is fortunate to claim a Virginia Beach native as Sous Chef. Patrick Latham has made a career in fine dining a lifelong pursuit and has worked from companies as varied as Nemicolin woodlands resort a 5 star 5 diamond resort in Pennsylvania to studying under renowned chefs up and down the East Coast. His focus at Varia will be the translation of local Coastal Virginia produce and fresh seafood into authentic Italian fare.
Sommelier Bethany Morris
A Hampton Roads native, Bethany is a Level 2 Certified Sommelier and has spent over a decade in the local restaurant industry. First earning an appreciation for fine wine as a consultant for Republic National and was the operating partner and owner of Let's Talk Wine, in Chesapeake, Virginia. Today she manages the inventory for Varia and its sister restaurants at The Main while also curating experiences at our Wine Bar.
